The appearance of bovine spongiform encephalopathy in cattle has generated important questions concerning
the link between BSE in cattle, and new variant Creutzfeldt-Jakob disease in humans. In the past, the most likely
source of human exposure to BSE was through consumption of infected bovine offal, principally brain and
spinal cord, which contain the highest concentrations of BSE prions in infected cattle.
